Ingrédients
  

For the Marinade
  • 1/4 cup olive oil
  • 1/4 cup lemon juice freshly squeezed
  • 2 tbsp fresh parsley chopped
  • 1 tbsp fresh thyme chopped
  • 2 cloves garlic minced
  • 1 tsp salt
  • 1/2 tsp black pepper
For the Chicken
  • 4 boneless, skinless chicken breasts about 6 oz each

Equipment

  • Grill or grill pan
  • Mixing bowl
  • Ziplock bag or shallow dish

Method
 

  1. In a mixing bowl, whisk together olive oil, lemon juice, parsley, thyme, garlic, salt, and pepper.
  2. Place chicken breasts in a ziplock bag or shallow dish and pour the marinade over them. Coat evenly.
  3. Refrigerate for at least 30 minutes or up to 4 hours.
  4. Preheat grill or grill pan to medium-high heat.
  5. Remove chicken from the marinade and discard excess marinade.
  6. Grill chicken for 5-6 minutes per side, or until internal temperature reaches 165°F.
  7. Let rest for 5 minutes before slicing and serving.

Notes
