- Heat the olive oil in a large pot over medium heat. Add the onion and cook until softened, about 5 minutes.
- Add the garlic, ginger, curry powder, cumin, and turmeric. Stir and cook for 1 minute until fragrant.
- Add the lentils, sweet potatoes, coconut milk, and vegetable broth. Stir to combine.
- Bring to a boil, then reduce heat and simmer for 20-25 minutes, until the lentils and sweet potatoes are tender.
- Stir in the spinach and cook for 2-3 minutes, until wilted. Season with salt and pepper to taste.
