- Heat olive oil in a large pot over medium heat. Add onion and garlic, sauté until softened.
- Add carrot and celery. Cook for 5 minutes, stirring occasionally.
- Stir in cabbage, diced tomatoes, vegetable broth, thyme, and oregano. Bring to a boil.
- Reduce heat to low, cover, and simmer for 20 minutes or until vegetables are tender.
- Season with salt and pepper to taste. Serve hot.
