Ingrédients
  

For the Pie Crust
  • 2 cups all-purpose flour
  • 1 tsp salt
  • 2/3 cup butter cold and cubed
  • 6 tbsp ice water
For the Filling
  • 4 cups pumpkin puree
  • 1 cup brown sugar
  • 3 eggs
  • 1 tbsp pumpkin pie spice

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. Mix flour and salt in a large bowl. Cut in butter until the mixture resembles coarse crumbs.
  3. Gradually add ice water, stirring until the dough comes together. Roll out the dough and place it in a pie dish.
  4. In another bowl, combine pumpkin puree, brown sugar, eggs, and pumpkin pie spice. Pour the filling into the crust.
  5. Bake for 45 minutes or until the filling is set. Let cool before serving or refrigerating.
