For the Crust
  • 1.5 cups graham cracker crumbs
  • 0.25 cup granulated sugar
  • 0.5 cup unsalted butter melted
For the Filling
  • 16 oz cream cheese softened
  • 0.75 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract

Method
 

  1. Preheat oven to 325°F (165°C).
  2. Mix graham cracker crumbs, sugar, and melted butter in a bowl. Press into the bottom of a baking dish.
  3. Beat cream cheese and sugar until smooth. Add eggs one at a time, then vanilla.
  4. Pour filling over crust. Bake for 45 minutes or until set.
  5. Cool completely, then refrigerate for at least 4 hours before serving.
