Method
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, toss the Brussels sprouts with olive oil, salt, and pepper.
- Spread the Brussels sprouts in a single layer on the prepared baking sheet.
- Roast for 15 minutes.
- While the sprouts are roasting, cook the chopped bacon in a skillet over medium heat until crispy. Drain off most of the bacon fat, leaving about 1 tablespoon in the skillet.
- Add the maple syrup to the skillet with the bacon and stir to combine. Cook for 1 minute until slightly thickened.
- Remove the Brussels sprouts from the oven. Add the bacon-maple mixture to the baking sheet and toss to coat the sprouts.
- Return the baking sheet to the oven and roast for another 10-15 minutes, or until the Brussels sprouts are tender and caramelized.
Notes
Serve immediately as a side dish.
