For the Oatmeal
  • 2 cups rolled oats
  • 1/4 cup maple syrup
  • 1/4 cup chopped pecans
  • 1 tsp cinnamon
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 cup milk dairy or plant-based
  • 1 egg
  • 2 tbsp melted butter or coconut oil
  • 1 tsp vanilla extract

Method
 

  1. Preheat the oven to 375°F (190°C). Grease a 9x9-inch baking dish.
  2. In a mixing bowl, combine the oats, maple syrup, pecans, cinnamon, baking powder, and salt.
  3. In another bowl, whisk together the milk, egg, melted butter, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until well combined.
  5. Transfer the mixture to the prepared baking dish and spread evenly.
  6. Bake for 30 minutes, or until the top is golden and the oatmeal is set.
  7. Let cool slightly before serving. Drizzle with extra maple syrup if desired.
