Ingrédients
  

For the Salad
  • 1/4 cup black beans rinsed and drained
  • 1/4 cup corn kernels fresh or frozen
  • 1/4 cup cherry tomatoes halved
  • 1/4 cup bell pepper diced
  • 2 tbsp red onion finely chopped
  • 1/4 cup shredded lettuce
  • 1/4 cup cheddar cheese shredded
  • 1 tbsp cilantro chopped
For the Dressing
  • 2 tbsp sour cream
  • 1 tbsp lime juice
  • 1/2 tsp taco seasoning

Method
 

  1. In a small bowl, mix sour cream, lime juice, and taco seasoning to make the dressing.
  2. Layer the ingredients in a mason jar in this order: dressing, black beans, corn, cherry tomatoes, bell pepper, red onion, lettuce, cheese, and cilantro.
  3. Seal the jar and refrigerate until ready to eat. Shake well before serving.
