  • 2 cups cucumber diced
  • 1 cup cherry tomatoes halved
  • 1/2 cup kalamata olives pitted
  • 1/4 cup red onion thinly sliced
  • 1/4 cup feta cheese crumbled
For the Dressing
  • 3 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Method
 

  1. In a large mixing bowl, combine the cucumber, cherry tomatoes, olives, red onion, and feta cheese.

  4. Serve immediately or refrigerate for up to 1 hour before serving.
