Method
- Mix graham cracker crumbs, melted butter, and sugar in a bowl until combined.
- Press the mixture into the bottom of muffin cups or a lined muffin tin to form the crust.
- In another bowl, beat cream cheese and sugar until smooth.
- Add lemon zest, lemon juice, and vanilla extract. Mix well.
- Fold in whipped cream until fully incorporated.
- Spoon the filling over the crust in each cup.
- Chill in the refrigerator for at least 2 hours before serving.
