For the Crust
  • 1 cup graham cracker crumbs
  • 3 tbsp melted butter
  • 1 tbsp sugar
For the Filling
  • 8 oz cream cheese softened
  • 1/2 cup sugar
  • 1 tbsp lemon zest
  • 2 tbsp lemon juice
  • 1 tsp vanilla extract
  • 1 cup whipped cream

Method
 

  1. Mix graham cracker crumbs, melted butter, and sugar in a bowl until combined.
  2. Press the mixture into the bottom of muffin cups or a lined muffin tin to form the crust.
  3. In another bowl, beat cream cheese and sugar until smooth.
  4. Add lemon zest, lemon juice, and vanilla extract. Mix well.
  5. Fold in whipped cream until fully incorporated.
  6. Spoon the filling over the crust in each cup.
  7. Chill in the refrigerator for at least 2 hours before serving.
