For the Roast
  • 1 prime rib roast (about 7-8 lbs) bone-in
  • 2 tbsp olive oil
  • 2 tsp kosher salt
  • 1 tsp black pepper freshly ground
  • 2 tsp garlic powder
  • 1 tsp rosemary dried
  • 1 tsp thyme dried

Method
 

  1. Preheat the oven to 450°F (230°C).
  2. Pat the prime rib roast dry with paper towels. Rub it all over with olive oil.
  3. Mix the salt, pepper, garlic powder, rosemary, and thyme in a small bowl. Rub the seasoning evenly over the roast.
  4. Place the roast in a roasting pan, bone-side down. Insert a meat thermometer into the thickest part of the meat.
  5. Roast at 450°F (230°C) for 15 minutes, then reduce the heat to 325°F (165°C). Continue roasting until the thermometer reads 120°F (49°C) for rare or 130°F (54°C) for medium-rare, about 1.5 to 2 hours.
  6. Remove the roast from the oven and let it rest for 30 minutes before carving.

Notes
