- Preheat the oven to 375°F (190°C). Grease a muffin tin or line with paper liners.
- In a large bowl, mix the oats, baking powder, pumpkin pie spice, and salt.
- In another bowl, whisk together the pumpkin puree, maple syrup, milk, egg, coconut oil, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until combined.
- Scoop the mixture evenly into the prepared muffin tin.
- Bake for 20-25 minutes, or until set and lightly golden.
- Let cool for 5 minutes before removing from the tin.
