- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a bowl, whisk together the flour, baking soda, pumpkin pie spice, and salt.
- In another bowl, beat the butter and sugar until creamy. Add the egg, pumpkin puree, and vanilla, mixing until smooth.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Drop tablespoon-sized portions of dough onto the baking sheet, spacing them 2 inches apart.
- Bake for 10-12 minutes or until the edges are lightly golden. Let cool on the sheet for 5 minutes before transferring to a wire rack.
