For the Bread
  • 1 cup pumpkin puree
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 cup granulated sugar
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp pumpkin pie spice
For the Streusel Topping
  • 1/4 cup all-purpose flour
  • 1/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/4 tsp cinnamon
  • 2 tbsp cold butter cubed

Method
 

  1. Preheat the oven to 350°F (175°C). Grease a 9x5-inch loaf pan.
  2. In a large bowl, whisk together the pumpkin puree, oil, eggs, and vanilla until smooth.
  3. Add the sugar, flour, baking soda, salt, and pumpkin pie spice. Stir until just combined.
  4. Pour the batter into the prepared loaf pan.
  5. In a small bowl, mix the streusel ingredients until crumbly. Sprinkle over the batter.
  6. Bake for 55-60 minutes, or until a toothpick inserted in the center comes out clean.
  7. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
