Ingrédients
  

For the Main Dish
  • 500 g chicken breast cut into bite-sized pieces
  • 1 tbsp olive oil
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 cup broccoli florets
  • 1 cup bell pepper sliced
  • 1/2 cup low-sodium soy sauce
  • 1 tbsp honey
  • 1 tsp cornstarch mixed with 2 tbsp water

Method
 

  1. Heat olive oil in a large skillet or wok over medium-high heat.
  2. Add chicken and cook until browned and cooked through. Remove chicken from skillet and set aside.
  3. Add onion to the skillet and cook until softened, about 3-5 minutes.
  4. Add garlic, broccoli, and bell pepper. Stir-fry for 5-7 minutes until vegetables are tender-crisp.
  5. Return chicken to the skillet. Pour in soy sauce and honey. Stir to combine.
  6. Add cornstarch mixture and stir until the sauce thickens.
  7. Serve immediately.

Notes

Serve with brown rice or quinoa for a complete meal.
