Method
 

  1. Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a large bowl, toss the potato wedges with olive oil, salt, and black pepper until evenly coated.
  3. Arrange the wedges in a single layer on the baking sheet. Bake for 25-30 minutes, flipping halfway, until golden and crispy.
  4. In a small bowl, mix minced garlic, Parmesan cheese, and parsley. Sprinkle over the hot wedges before serving.
