- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Toss the bell peppers and zucchini with olive oil, salt, and pepper. Spread them on the baking sheet.
- Roast the vegetables for 20 minutes, or until tender and slightly browned.
- Spread hummus evenly over each tortilla. Layer with roasted vegetables and baby spinach.
- Roll the tortillas tightly and slice in half before serving.
