Method
- Pat the steaks dry with paper towels. Rub with olive oil and season with salt and pepper.
- Heat a cast iron skillet over high heat. Add the steaks and sear for 3-4 minutes per side for medium-rare.
- Reduce heat to medium. Add butter, garlic, and rosemary to the skillet. Baste the steaks with the melted butter for 1-2 minutes.
- Remove the steaks from the skillet and let them rest for 5 minutes before serving.
