Method
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Toss the green beans and potatoes with olive oil, salt, and pepper. Spread them on one side of the baking sheet.
- Rub the salmon fillets with olive oil, salt, pepper, and lemon zest. Place them on the other side of the baking sheet.
- Bake for 20-25 minutes, until the salmon is cooked through and the vegetables are tender.
- Serve immediately.
