  • 1 tablespoon olive oil

Method
 

  1. In a bowl, whisk together the eggs, milk, salt, and pepper until well combined.
  2. Heat the olive oil in a non-stick skillet over medium heat.

  4. Pour the egg mixture over the spinach. Cook, stirring gently with a spatula, until the eggs are almost set.
  5. Sprinkle the crumbled feta cheese over the eggs. Continue to cook for another minute, or until the eggs are fully cooked and the feta is slightly melted.
  6. Serve immediately.
