Shrimp and Veggie Stir Fry

Ingrédients
  

For the Stir Fry
  • 1 lb shrimp peeled and deveined
  • 2 tbsp vegetable oil
  • 2 cloves garlic minced
  • 1 tbsp ginger grated
  • 1 cup bell peppers sliced
  • 1 cup broccoli florets
  • 1 cup carrots sliced
  • 1 cup snap peas
For the Sauce
  • 3 tbsp soy sauce
  • 1 tbsp honey
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1/2 tsp red pepper flakes optional

Equipment

  • Large skillet or wok
  • Wooden spoon or spatula

Method
 

  1. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the shrimp and cook for 2-3 minutes until pink. Remove from the skillet and set aside.
  3. In the same skillet, add the garlic and ginger. Stir for 30 seconds until fragrant.
  4. Add the bell peppers, broccoli, carrots, and snap peas. Stir-fry for 4-5 minutes until vegetables are tender-crisp.
  5. Return the shrimp to the skillet. Pour the sauce over the shrimp and vegetables. Stir to combine and cook for 1-2 minutes until heated through.
  6. Serve immediately over rice or noodles.
