Method
- Heat the vegetable oil in a large skillet or wok over medium-high heat.
- Add the shrimp and cook for 2-3 minutes until pink. Remove from the skillet and set aside.
- In the same skillet, add the garlic and ginger. Stir for 30 seconds until fragrant.
- Add the bell peppers, broccoli, carrots, and snap peas. Stir-fry for 4-5 minutes until vegetables are tender-crisp.
- Return the shrimp to the skillet. Pour the sauce over the shrimp and vegetables. Stir to combine and cook for 1-2 minutes until heated through.
- Serve immediately over rice or noodles.
