Method
- Preheat your oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish.
- In a large bowl, combine the cooked chicken, cream of mushroom soup, cream of chicken soup, milk, cheddar cheese, cooked rice, chopped onion, and chopped celery (if using). Stir until well combined.
- Pour the mixture into the prepared baking dish and spread evenly.
- In a small bowl, mix the crushed crackers with the melted butter. Sprinkle this mixture evenly over the top of the casserole.
- Bake for 45 minutes, or until the casserole is bubbly and the topping is golden brown.
- Let the casserole stand for a few minutes before serving.
Notes
You can substitute other cooked meats like turkey or ham for the chicken. Feel free to add other vegetables like peas or carrots.
