Simple Chicken and Rice Casserole

Ingrédients
  

For the Casserole
  • 2 cups cooked chicken shredded or diced
  • 1 can cream of mushroom soup 10.5 ounce
  • 1 can cream of chicken soup 10.5 ounce
  • 1 cup milk
  • 1 cup shredded cheddar cheese
  • 1 cup cooked white rice long grain
  • 1/4 cup chopped onion optional
  • 1/4 cup chopped celery optional
For the Topping
  • 1 cup crushed butter crackers like Ritz
  • 2 tablespoons melted butter

Method
 

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish.
  2. In a large bowl, combine the cooked chicken, cream of mushroom soup, cream of chicken soup, milk, cheddar cheese, cooked rice, chopped onion, and chopped celery (if using). Stir until well combined.
  3. Pour the mixture into the prepared baking dish and spread evenly.
  4. In a small bowl, mix the crushed crackers with the melted butter. Sprinkle this mixture evenly over the top of the casserole.
  5. Bake for 45 minutes, or until the casserole is bubbly and the topping is golden brown.
  6. Let the casserole stand for a few minutes before serving.

Notes

You can substitute other cooked meats like turkey or ham for the chicken. Feel free to add other vegetables like peas or carrots.
