Method
- Cook the spaghetti in a large pot of boiling salted water according to package directions. Reserve about 1/2 cup of pasta water before draining.
- While the pasta cooks, heat the olive oil in a skillet over medium heat. Add the minced garlic and cook until fragrant, about 1 minute.
- Add the diced tomatoes and dried oregano to the skillet. Season with salt and pepper. Bring to a simmer and cook for 5-7 minutes, allowing the sauce to thicken slightly.
- Add the drained spaghetti to the skillet with the sauce. Toss to combine. If the sauce seems too thick, add a little of the reserved pasta water to reach your desired consistency.
- Serve immediately, topped with grated Parmesan cheese if desired.
Notes
You can add cooked vegetables or protein to the sauce for a more complete meal.
