Method
- Preheat the oven to 425°F (220°C).
- Pat the chicken dry with paper towels. Rub olive oil over the entire surface.
- Mix salt, pepper, and thyme in a small bowl. Sprinkle the mixture evenly over the chicken.
- Place the chicken breast-side up in a roasting pan. Roast for 1 hour or until the internal temperature reaches 165°F (74°C).
- Let the chicken rest for 10 minutes before carving.
