  • 1 whole chicken (3-4 lbs)
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme

Method
 

  1. Preheat the oven to 375°F (190°C).
  2. Pat the chicken dry with paper towels and place it in a roasting pan.
  3. Rub the chicken with olive oil, then season with salt, pepper, and thyme.
  4. Roast for about 60 minutes, or until the internal temperature reaches 165°F (74°C).
  5. Let the chicken rest for 10 minutes before carving.
