  • 1 cup bell peppers diced

  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, toss the vegetables with olive oil, salt, pepper, and garlic powder.
  3. Spread the vegetables evenly on a baking sheet.
  4. Roast for 20-25 minutes, stirring halfway through, until tender and slightly browned.
