For the Skillet
  • 1 lb ground turkey
  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 bell pepper, diced
  • 1 cup zucchini, diced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried oregano

Method
 

  1. Heat olive oil in a large skillet over medium heat.
  2. Add onion and garlic. Cook for 2 minutes until softened.
  3. Add ground turkey. Cook until browned, breaking it into small pieces.
  4. Stir in bell pepper and zucchini. Cook for 5 minutes.
  5. Season with salt, pepper, and oregano. Stir well.
  6. Cook for another 5 minutes until vegetables are tender.
