Method
- Season the chicken breasts with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook for 5-6 minutes per side until golden brown and cooked through. Remove from the skillet and set aside.
- In the same skillet, add garlic and sauté for 30 seconds until fragrant.
- Add cherry tomatoes and chicken broth. Cook for 3-4 minutes until the tomatoes soften.
- Return the chicken to the skillet and simmer for 2 minutes. Stir in fresh basil before serving.
