Slow Cooker Chicken Fajitas

Ingrédients
  

For the Chicken
  • 2 lbs boneless, skinless chicken breasts
  • 1 packet fajita seasoning mix
  • 1 tablespoon olive oil
For the Vegetables
  • 1 large onion sliced
For Serving
  • 8 flour tortillas
  • 1/2 cup shredded cheese optional
  • 1/4 cup salsa optional
  • 1/4 cup sour cream optional

Method
 

  1. Place chicken breasts in the slow cooker.
  2. Sprinkle the fajita seasoning over the chicken.
  3. Drizzle with olive oil.
  4. Add sliced onion and bell peppers on top of the chicken.
  5. Cover and cook on low for 4 hours or on high for 2 hours, until chicken is cooked through.
  6. Remove chicken from the slow cooker and shred it with two forks. Return the shredded chicken to the slow cooker and stir to combine with the vegetables.
  7. Serve the chicken and vegetable mixture in warm tortillas. Top with cheese, salsa, or sour cream if desired.

Notes

You can adjust the cooking time based on your slow cooker. For a spicier dish, add a pinch of cayenne pepper to the seasoning.
