For the Pork Carnitas
  • 3 lbs pork shoulder cut into chunks
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp cumin
  • 1 tsp oregano
  • 1 tsp chili powder
  • 4 cloves garlic minced
  • 1 orange juice
  • 1 cup chicken broth
For Serving
  • 12 corn tortillas
  • 1 cup diced onion
  • 1 cup chopped cilantro
  • 1 lime cut into wedges

Method
 

  1. Season the pork chunks with salt, pepper, cumin, oregano, and chili powder.
  2. Heat olive oil in a skillet over medium-high heat. Brown the pork on all sides, then transfer to the slow cooker.
  3. Add minced garlic, orange juice, and chicken broth to the slow cooker.
  4. Cover and cook on low for 8 hours, or until the pork is tender and shreds easily.
  5. Remove the pork from the slow cooker and shred it with two forks. Optionally, crisp the shredded pork in a skillet for extra texture.
  6. Serve the carnitas on warm corn tortillas with diced onion, chopped cilantro, and lime wedges.
