Method
- In a pitcher, gently muddle the raspberries.
- Add the fresh lime juice and simple syrup to the pitcher. Stir to combine.
- Add the cold water and stir well. Strain the mixture through a fine-mesh sieve into another pitcher or directly into serving glasses, pressing on the solids to extract as much liquid as possible. Discard the solids.
- Fill serving glasses with ice. Pour the raspberry limeade mixture over the ice, filling each glass about halfway.
- Top off each glass with chilled sparkling water or club soda.
- Garnish with fresh raspberries and lime slices, if desired. Serve immediately.
Notes
For a sweeter drink, add more simple syrup. For a tarter drink, add more lime juice. You can make the raspberry limeade base ahead of time and store it in the refrigerator for up to 2 days. Add the sparkling water just before serving.
