For the Chicken
  • 1 lb Chicken breast boneless, skinless, cut into bite-sized pieces
  • 2 Chipotle peppers in adobo sauce minced, plus 1 tbsp adobo sauce
  • 1 tsp Cumin
  • 1 tsp Chili powder
  • 0.5 tsp Garlic powder
  • 0.5 tsp Onion powder
  • 1 tbsp Olive oil
For Serving
  • 8 Corn tortillas
  • 1 cup Shredded lettuce
  • 0.5 cup Diced tomatoes
  • 0.5 cup Crumbled cotija cheese
  • 0.25 cup Chopped cilantro
  • 1 Lime cut into wedges

Method
 

  1. In a bowl, combine the chicken pieces with minced chipotle peppers, adobo sauce, cumin, chili powder, garlic powder, and onion powder. Toss to coat the chicken evenly.
  2. Heat olive oil in a skillet over medium-high heat. Add the seasoned chicken and cook for about 5-7 minutes per side, or until cooked through and lightly browned.
  3. Warm the corn tortillas according to package directions.
  4. Assemble the tacos by filling each tortilla with the cooked chipotle chicken. Top with shredded lettuce, diced tomatoes, cotija cheese, and cilantro.
  5. Serve immediately with lime wedges on the side.

Notes

For a milder flavor, use fewer chipotle peppers or remove the seeds before mincing. You can also add a pinch of sugar to the chicken mixture to balance the heat.
