- In a bowl, combine the chicken pieces with minced chipotle peppers, adobo sauce, cumin, chili powder, garlic powder, and onion powder. Toss to coat the chicken evenly.
- Heat olive oil in a skillet over medium-high heat. Add the seasoned chicken and cook for about 5-7 minutes per side, or until cooked through and lightly browned.
- Warm the corn tortillas according to package directions.
- Assemble the tacos by filling each tortilla with the cooked chipotle chicken. Top with shredded lettuce, diced tomatoes, cotija cheese, and cilantro.
- Serve immediately with lime wedges on the side.
Notes
For a milder flavor, use fewer chipotle peppers or remove the seeds before mincing. You can also add a pinch of sugar to the chicken mixture to balance the heat.
