Method
- Preheat the oven to 375°F (190°C). Grease a 9-inch pie dish.
- Heat olive oil in a skillet over medium heat. Add mushrooms and cook until softened, about 5 minutes.
- Add spinach and cook until wilted, about 2 minutes. Remove from heat and let cool slightly.
- In a mixing bowl, whisk eggs and milk together. Stir in the cooked mushrooms and spinach, feta cheese, salt, and pepper.
- Pour the mixture into the prepared pie dish. Bake for 30 minutes or until set and lightly golden.
- Let cool for 5 minutes before slicing and serving.
