For the Vegetables
  • 1 cup asparagus trimmed and cut into 2-inch pieces
  • 1 cup peas fresh or frozen
  • 1 cup radishes thinly sliced
For the Dressing
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp honey
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Method
 

  1. Heat olive oil in a large skillet over medium heat.
  2. Add asparagus and peas. Cook for 5 minutes, stirring occasionally.
  3. Add radishes and cook for another 3 minutes.
  4. In a mixing bowl, whisk together lemon juice, honey, salt, and pepper.
  5. Toss the cooked vegetables with the dressing. Serve warm.
