Method
- Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
- In a mixing bowl, whisk together the flour, sugar, baking powder, and salt for the biscuits.
- Cut in the cold butter using a pastry cutter until the mixture resembles coarse crumbs.
- Stir in the heavy cream until just combined. Do not overmix.
- Turn the dough onto a floured surface and pat it into a 1-inch thick circle. Cut into 6 rounds using a biscuit cutter.
- Place the biscuits on the prepared baking sheet and bake for 12-15 minutes, or until golden brown. Let cool.
- While the biscuits bake, mix the sliced strawberries with sugar in a bowl. Let sit for 10 minutes to macerate.
- For the whipped cream, beat the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
- Split the cooled biscuits in half. Layer with strawberries and whipped cream. Serve immediately.
