Method
- Preheat your oven to 350°F (175°C). Line a 9x13 inch baking pan with parchment paper.
- In a bowl, mix graham cracker crumbs, melted butter, and sugar. Press the mixture into the bottom of the prepared pan.
- Bake the crust for 10 minutes. Remove from the oven and let it cool slightly.
- In another bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in vanilla.
- Pour the cheesecake filling over the crust. Bake for 20 minutes or until set. Let it cool completely.
- In a saucepan, combine strawberries, sugar, and lemon juice. Cook over medium heat until the strawberries soften. Let it cool, then spread over the cheesecake layer.
- Chill the bars in the refrigerator for at least 4 hours before serving.
