Ingrédients
  

For the Cookies
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 cup unsalted butter cold and cubed
  • 1 tsp vanilla extract
  • 1/4 tsp salt
For the Strawberry Filling
  • 1/2 cup fresh strawberries diced
  • 1 tbsp granulated sugar

Method
 

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a bowl, mix the strawberries and 1 tbsp sugar. Set aside.
  3. In another bowl, combine flour, sugars, and salt. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Stir in the vanilla extract. Fold in the strawberries.
  5. Scoop tablespoon-sized portions onto the baking sheet. Bake for 12 minutes or until lightly golden.
  6. Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
