Ingrédients
  

For the Peppers
  • 4 bell peppers tops removed and seeds cleaned out
For the Filling
  • 1 cup cooked quinoa
  • 1 can black beans drained and rinsed
  • 1 cup corn kernels fresh or frozen
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup shredded cheese optional

  • Mixing bowl

Method
 

  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine the cooked quinoa, black beans, corn, cumin, chili powder, salt, and black pepper.
  3. Stuff each bell pepper with the quinoa mixture and place them in a baking dish.
  4. If using cheese, sprinkle it on top of the stuffed peppers.
  5. Bake for 25-30 minutes, or until the peppers are tender.
