Ingrédients
  

For the Salad
  • 1 head Romaine lettuce chopped
  • 1 cup Cherry tomatoes halved
  • 1/2 cup Cucumber sliced
  • 1/4 cup Red onion thinly sliced
  • 1/4 cup Bell pepper chopped
For the Dressing
  • 3 tablespoons Olive oil
  • 1 tablespoon Red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon Honey
  • 1 clove Garlic minced
  • Salt to taste Salt
  • Pepper to taste Black pepper

Method
 

  1. Combine the chopped romaine lettuce, halved cherry tomatoes, sliced cucumber, thinly sliced red onion, and chopped bell pepper in a large bowl.
  2. In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, honey, minced garlic, salt, and pepper until well combined.
  3. Pour the dressing over the salad and toss gently to coat all the ingredients.
  4. Serve immediately.

Notes

You can add grilled chicken, shrimp, or chickpeas for a more substantial meal. Other additions include avocado, corn, or feta cheese.
