Method
- Combine the chopped romaine lettuce, halved cherry tomatoes, sliced cucumber, thinly sliced red onion, and chopped bell pepper in a large bowl.
- In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, honey, minced garlic, salt, and pepper until well combined.
- Pour the dressing over the salad and toss gently to coat all the ingredients.

Notes
You can add grilled chicken, shrimp, or chickpeas for a more substantial meal. Other additions include avocado, corn, or feta cheese.
