For the Cupcakes
  • 1.5 cups all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp salt
  • 0.5 cup unsalted butter softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 0.5 cup milk

Method
 

  1. Preheat the oven to 350°F (175°C). Line a muffin tin with cupcake liners.
  2. In a bowl, whisk together the flour, baking powder, and salt.
  3. In another bowl, beat the butter and sugar until light and fluffy.
  4. Add the eggs one at a time, then mix in the vanilla extract.
  5. Alternate adding the dry ingredients and milk, mixing until just combined.
  6. Divide the batter evenly into the cupcake liners, filling each about 2/3 full.
  7. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  8. Let the cupcakes cool in the tin for 5 minutes, then transfer to a wire rack.

Notes
