Method
- Preheat the oven to 375°F (190°C).
- Cook the ziti pasta according to package instructions until al dente. Drain and set aside.
- Heat olive oil in a skillet over medium heat. Add garlic, onion, bell pepper, and mushrooms. Cook until vegetables are tender, about 5-7 minutes.
- Stir in the marinara sauce and chopped spinach. Simmer for 5 minutes.
- Combine the cooked pasta with the sauce mixture. Transfer to a baking dish.
- Sprinkle mozzarella and parmesan cheese on top.
- Bake for 20 minutes or until the cheese is melted and bubbly.
