For the Hash
  • 2 cups diced sweet potatoes peeled
  • 1 medium onion diced
  • 1 bell pepper diced
  • 2 cups chopped kale stems removed
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp paprika

Method
 

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced sweet potatoes and cook for 8-10 minutes, stirring occasionally, until they begin to soften.
  3. Add onion and bell pepper. Cook for 5 minutes until vegetables are tender.
  4. Stir in kale, salt, pepper, and paprika. Cook for 2-3 minutes until kale wilts.
  5. Serve warm.
