For the Dough
  • 2 cups all-purpose flour
  • 1 tsp salt
  • 1 tbsp olive oil
  • 0.75 cup warm water
For the Filling
  • 1 cup shredded mozzarella cheese
  • 0.5 cup diced bell peppers
  • 0.5 cup sliced mushrooms
  • 0.25 cup sliced black olives
  • 0.5 cup pizza sauce

Method
 

  1. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a large bowl, mix the flour and salt. Add the olive oil and warm water, then knead until a smooth dough forms.
  3. Divide the dough into 4 equal parts. Roll each part into a circle about 6 inches in diameter.
  4. Spread pizza sauce on one half of each dough circle. Top with cheese, bell peppers, mushrooms, and olives.
  5. Fold the dough over the filling and press the edges to seal. Use a fork to crimp the edges.
  6. Place the pockets on the baking sheet. Bake for 15 minutes or until golden brown.
