Ingrédients
  

For the Chicken
  • 4 bone-in, skin-on chicken thighs
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil
For the Sauce
  • 2 tbsp butter
  • 8 oz cremini mushrooms sliced
  • 4 garlic cloves minced
  • 1 tsp thyme dried
  • 1 cup heavy cream
  • 1/4 cup chicken broth
  • 1/4 tsp salt
  • 1/4 tsp black pepper

  • Wooden spoon

Method
 

  1. Season the chicken thighs with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add the chicken thighs skin-side down and cook for 5-6 minutes until golden brown. Flip and cook for another 5-6 minutes. Remove from the skillet and set aside.
  3. In the same skillet, melt butter over medium heat. Add mushrooms and cook for 4-5 minutes until softened.
  4. Add garlic and thyme, stirring for 1 minute until fragrant.
  5. Pour in heavy cream and chicken broth, stirring to combine. Bring to a simmer.
  6. Return the chicken thighs to the skillet, skin-side up. Simmer for 5-7 minutes until the sauce thickens and the chicken is cooked through.
  7. Season with salt and pepper to taste before serving.
