Ingrédients
  

For the Pasta
  • 12 oz whole wheat pasta
  • 1 tbsp olive oil
  • 1/2 tsp salt
For the Roasted Vegetables
  • 2 cups broccoli florets
  • 1 cup cherry tomatoes
  • 1 cup bell peppers sliced
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Method
 

  1. Preheat the oven to 400°F (200°C).
  2. Toss the broccoli, cherry tomatoes, and bell peppers with olive oil, salt, and black pepper. Spread them on a baking sheet.
  3. Roast the vegetables for 20-25 minutes, until tender and slightly browned.
  4. While the vegetables roast, cook the pasta in boiling salted water according to package instructions. Drain and toss with olive oil.
  5. Combine the cooked pasta with the roasted vegetables. Serve warm.
